How long does a Souvla take to cook?
Souvla should take about 2 1/2 – 3 hours to cook. Don’t rush – this is slow food at its best and you’ll be rewarded with tender, flavourful lamb.
How do you use a rotisserie for the first time?

- Truss and spit the meat.
- Set the grill up for indirect heat, with a drip pan in the middle, between the lit burners or the coals.
- Mount the motor.
- Open the lid on the grill.
- Mount the spit into the rotisserie bracket.
- Turn on the rotisserie motor.
- Cook with the lid closed.
